If it hasn't been used in awhile, the best thing (assuming you've rtfm and have the settings right) is to plug the van in to 120v sitting in your driveway, set the fridge to 120v Maximum temp, and just let it run for a few days. With the propane fridges in people's lake cabins, I used to turn them upside down for a while when they didn't want to get cold, but that's a bit hard to do with the van. Anyway, if, after a couple days running on 120v it isn't making ice on the fins inside, you've got a problem.
