The PO of our Westy added two gimbaled cup holders to the center console (probably from a boating store), and in general they do pretty well, the exception being that they really aren't quite deep enough for a tall cup (on the list to be fixed some day...)

This position is much much better than the position on our previous Wolfsburg (aisle side of pasenger seat box). On one trip which I remember very vividly, my son managed to spill my coffee 4 times, walking back to the rear from the front seat!

Another solution, for rigid cups - attach two tie down clips to the front and rear corners of the seat box and put a bungee cord in between. A cup or thermos can then be stuck behind it with one hand while driving. Not quite as easy as cup holder, but more secure. I got several packages of those clips (a U-shaped piece about 1" long with a screw hole at each end) from BoatUS and have installed them in various locations in the van for attaching bungee cords. Great to keep bags and containers from shifting during travel.
