At one time I was playing with auxiliary fans/air flow to the back of the fridge, and I found that adding fans made the temperature inside the box go up instead of down -- so I left it with just a Fridge-Mate fan replacing the original, and in the same location. I'd sure be interested in any temperature-vs-airflow data that people might have.

Try adding diodes in series with the + lead. Each one will drop the voltage half a volt or so. You can wire them to a rotary switch once you decide how many work for you. Below about 6-7 volts I would expect the motor to quit and/or run slowly backwards.
