I have one of these, well actually two. The probe does unplug from the readout. The plug is a mouled on unit, so removing it would have to be done very carefully. It looks like a standard ultra-miniature audio plug to me. The cable is braided stainless steel on the outside.

On another issue, maximum temperature, the digital readout doesn't function above something like 375 degrees Fahrenheit, and goes to an error message, reading out "HI". I would think that would be sufficient range to monitor oil temperatures. > These little gizzies are really great for doing southern style barbecue or smoke cooking, which is a very serious matter and can benefit from a little hi-tech. You can probably find other uses as well, and we'll be checking the upcoming Thanksgiving turkey with ours, of course. I have used these for a couple of years now, and while they're pretty robust, I did have one that was left out in freezing temperatures develop a partially bad display. I don't think that all LCD displays survive freezing temperatures too well.
