I'm not sure what set up you have in your '82 but I'm assuming its an inline 4.

My son had a similar bucking problem with his Jetta and it turned out to be a tear in the boot that goes over the afm. Every time he pulled away, the torque reaction moved the engine and opened the tear, making the mixture lean. It took a while to find the problem because the tear wasnt obvious when we took it out to check and then we dismissed it for a while. His was using the CIS fuel injection system, with spark knock timing, not that this would affect the result.
