Go to www.eurocampers.com, which is run by fellow Listee Steve Lashley. He has a dash console that contains a fold out "desk" for the passenger. It will handle a laptop quite nicely.

The console is designed for 1980-84 vnns, but in my experience it can be easily mounted on 85-91 vans as well. Simply use some long screws and it will be quite secure.
