Typical VW flat four lifter thing. Type 4's do it too. When the cam is left pressing against a lifter that has a valve pushed open, the valve spring tension eventually pushes the oil out of the reservoir in the lifter.

The cure? Drive it. Be a little easy on it, as one valve isn't opening all the way. It will pump up in time, usually 15-20 minutes. If you are too bashful to drive around the neighborhood with the Hillbilly-sounding motor, rev it in the drive to about 2k or 3k for 15 minutes or so. It will eventually refill once the oil is thin enough.
