I have done something like this in the past. One cold winter day my Syncro wouldn't start and troubleshooting showed the temp2 sensor was bad. I stuck an appropriate fixed resistor in the plug to start and drive it until I could get a new sensor. I think I had one for cold starting and one for hot (I should look in my ashtray, I'm sure that's where they are stored!). I considered the potentiometer idea, but was too lazy to run the wires up front. Best solution is to keep a spare temp sensor.
