Has anybody modified their jack-points or a high-lift jack for their
syncros? I am referring to the high-lift ones that you often see other
off-road vehicles use.

I've looked into this.  I was thinking of modifying a Hi-lift jack so that
it would fit in the original jack point on the vanagon.
I never actually did it, but having looked at it I think it could be done.
I'd want to modify the jack, not the van.
It's a bit tricky because you have to weld to a casting, that involves some
special techniques.
