The rest of it has mainly to do with how clean the environment is where the food was prepared. Some of it looks like common-sense stuff these days, but remember that these laws came about centuries before Pasteur.

BTW, if you saw how the trafe vs. the kosher raw chickens are packed, you'd REALLY prefer the kosher, if they weren't so damn expensive.
