Mr.Damon,
Stainless studs with brass nuts will not corrode together.
Stainless on stainless will in time lock together, as will stainless on
steel.
Brass nuts are the best for removing
They will always come off whatever you put them on.
But, if you over tighten them, they can strip easier than steel, so one
must be careful using them.

Why, in particular brass nuts? Is there something wrong with using
stainless hardware (both studs and nuts) for the exhaust manifold (or
anywhere on the engine, for that matter)?

rustbuster juice that hold the engine tin on.   Do this over serveral
days.   Remove the tin and juice the other bolts you may have missed.
  Buy some nice vw brass nuts(at least eight for the heads) and
perhaps a few studs if your's look bad.
