Spend a few extra bucks and get DOT 4. Higher boiling point and lower moisture absorption. Also meets VW requirements.

It would be a good idea to pump lots of nice clean fluid through the system. My way is to use a couple of quarts of fluid and just open all the bleeders all the way (one at a time) and pump lots of fluid through until it comes out clear on the drain end. I get Dot 3 brake fluid 2 quarts for $3.00 at Chief Auto so I know it won't put you in the poor house to clean them good. Alcohol will also give it a good cleaning for about the same price.
