If your van is like mine, figure 25 mpg. You probably won't do worse than that, but you might very well do better. (I don't think my injector pump is timed quite right, right now.) www.gaspricewatch.com might help you with estimating diesel prices in the areas you'll be driving through, but I often just pick a number I know is conservative (i.e., higher than I'm likely to pay anywhere on the route) and use that. If your van is like mine you should probably also pack a case of 15W40. ;)

Food depends a lot on your eating habits. If you plan on cooking in the van you probably won't need to budget more than you would at home. If you plan on eating out, figure out how expensive your tastes are and go from there. ;)
