Just to let everyone know the outcome of my non-starting when hot Syncro Westfalia Joker.

BACKGROUND: Starts when cold, won't start when warm / hot, excessive fuel consumption, stinking rich exhaust, grey smoke when starting.

MOTOR: 2.1L "DJ" wasserboxer with 112hp. Digijet fuel injection system - same as the 83.5-85 1.9L that we have in North America less the O2 sensor.

SOLUTION: Mine was a two part problem as far as I can see. I measured the resistance of the coolant temp sensor (driver front side of motor, blue two pin connector). As the temp increased the resistance should decrease. At normal daytime temps it should be around 2000 to 3000 ohms. When I measured it, it was 90,000ohms - telling the ECU it was darn close to absolute zero! Not bad when it really is a cold motor, but not good (flooding time) when it is a warm motor. I replaced this with a new unit and it started up but the idle was still a little off. The next problem was the throttle switch, when it was closed it did not close the switch on the bottom of it to put the ECU into idle mode. Once this was fixed, it would start every time and hold a very steady idle.

Hopefully this will save someone some grief in the future. I am adding a 0 to 10K Ohm variable resistor to my emergency tool kit! :-)
