Dan,
    When I faced this issue I assumed that the
flattest surface should be mated. and used some copper
gasket goop on the less flat surface and antiseize on
the bolts.   gary

To the collective wisdom of the group
All of my gaskets from the headers came off with the
all metal side
facing
the exhaust system.  I thought I had read somewhere
that the metal side
should face the heads... of course the other side of
the gasket does
have a
metal lip, but is not all metal.  Does the orientation
of the gasket
make a
difference??
