I've found some glove-box sized document holders at the dollar store that work okay for organizing and sorting. They're canvas, so you can write what the contents are on the outside. I guess another method would be to use those small, clear zippered cosmetic bags that ladies use. They seem to come in various sizes, and pliable so you can smash 'em in there.
