The EU2000 should be sufficient. Keep in mind that of all motor loads, AC compressors are the hardest to get started. Inverters supplies like them the least due to the massive in rush. It is important that whenever the compressor turns off, (such as lowering the thermostat) that it does not try to restart for 2-3 minutes. This will allow the high pressure side to bleed down allowing the compressor to start easier. A compressor starting into high pressure, (locked rotor) can draw up 600% the normal full load current. This in rush can damage an inverter before the fuses/breakers have time to react. Most small RVs start with 3,000 watt generators to handle even a 7,000 btu AC and some lights. I would not recommend the EU1000 even if the rating appears sufficient.
