It has been done long time ago with many of them. VW done it themselves. It is called the LT28, LT31, etc. When you look on the German eBay under "Auto und Motorrad" and go to "Wohnmobil", you will see many of their makes. You can also see all kind of German Vanagons, Westfalias, Synchros, pop top and high top. It is kind of neat how many kind there is. And they are not expensive really. Those LT28 vans are also made out in Westfalia fittings with shower. I personally don't fancy them but they are wider and longer and taller. I have seen them on the road in Europe. Usually they have diesel engines and they seem to be kind of slow. Not my cup of tea, I would say. But some would say, that is what they were looking for. So, there they are. Pick your choice.
