My '91 Multivan (no kitchen) is upholstered behind that rear cabinet. The Grey trim panel extends all the way back to the hatch as well as the curtain track.

However... on models with A/C There is some plumbing (relays, hoses, wiring terminals) surface mounted behind the rearmost little door. Also the shelf that supports the evaporator is built into the cabinet and supported by it. You would have to extend the shelf to the wall or hang it from the upper bunk floor.

Looks quite do-able.
