Never hire a mechanic, or anyone else, it they are not sure about how to do what you want. Get him a stock motor to install stock and your chance for results will increase greatly. And if he is unsure about swapping in a 1.9 WasserBoxer, how enthusiastic will he be about converting to a Subaru. Save a half to two thirds the time/money and make it stock and maintain it better for better life. You cannot mechanic a swap if you want no issues. It must be engineered, designed to function, not spliced together. You won't find the level of skill required for the price of the neighborhood mechanic. Otherwise the value of the vehicle is diminished by the cost to make it all stock again. A swap can be done right, but not at anything like the value of maintaining properly the stock setup which any competent mechanic can do if he wants to just follow the Bentley and do it.
