My Haynes Manual says Parenthetical (..) comments are mine):

2) remove oil filter.

3&4) clamp coolant hoses to and from oil cooler (or get ready to plug them when removed).

5) remove nut in the middle of the oil cooler (a collar nut around the thing onto which the oil cooler screws - ed.) Remove the oil cooler and recover the o-ring.

6) use new o-ring when refitting. Clean oil cooler and block mating faces and coat with suitable sealant (vw amv 188 101.02 or equivalent) and being careful not to get any sealant into the central area sealed by the o-ring.

7) with the o-ring and oil cooler in place, re-fit central (collar) nut and tighten it to the specified torque (torque not given). check that the oil cooler is not fouling any adjcent components (whatever that means).

8) re-fit and secure coolant hoses with clamps.

9) fit and tighten oil filter in normal way (smear some oil on rubber seal etc), and hand tighten only.

10) check coolant levels and oil levels and

11) start engiine and check for oil and coolant leaks.

Sounds like it's not too bad of a job, its an o-ring you need (not a gasket) and some sealant.

I'll add step: one needs to purge the coolant of air.
