I never tried it on auto interiors, but I used to polish out scratches and fog on acrylic panels with a polish made for the purpose. Should be available at any supplier under "plexiglass" in your local yellow pages. Of course, if the panels are fogged by UV damage, then it isn't restricted to the surface, and it can't be polished out... That same plexiglass supplier should be able to provide replacement material that can be cut to fit, (since you've already removed the panels). Make sure you get the stuff with high UV resistance.
