Agreed. Good idea to check the entire brake system for leaks and/or
mechanical adjustment before changing cylinders. Make sure the vacuum
hose to the booster is looking good.
Master cylinder can be done from the top; remove instrument cluster and
it's pretty self explanatory.
Clutch master from underneath the dash if I remember right. Awkward, but
not too hard.
There's lots of talk re pressure bleeders for the lines. I use a
2'+/-length of clear plastic hose ( aquarium breather hose I think?)
that fits snugly over the bleeder nipple; the other end fits a hole
drilled in the plastic lid of a glass jar, and goes to the bottom of the
jar. Open the bleed nipple, pump the pedal, fluid runs into the jar
covers the tube so air can't get into the system. Keep pumping, adding
fluid until there is clear fluid only coming through, close the nipple
and repeat for the next nipple. Bubbles are easy to see. Fluid is kept
contained. Cheap. Works for me.
Apologies if this is all obvious and basic stuff that you already have
on the go.

Try finding the real problems with the brakes and clutch rather than
randonly replacing parts, that you have know idea how to replace.
Otherwise this sounds like you are crating more problems. Lets start
with the symptoms?
