I have done this before. here goes:

DO NOT REMOVE THE OIL COOLER!!!!!!

Get a wrench that grabs the INSIDE of a pipe and remove the pipe that goes through the oil cooler that the oil-filter screws onto. Remove that pipe (May need to loosen the monster-sized nut on that pipe first) and then the oil cooler will be loose. Remove the old o-ring and put a new one in place. You may need to scrape the old o-ring off of the surface. Put the pipe back in using the same technique. DO NO PUT any teflon tape or anything on those pipe threads else you'll have some issues with cracked blocks...

If you are in a hurry and can't get an o-ring right now, use the o-ring from an oil filter. btdt.
