I fixed mine when I bought my camper four years ago. The clevis pin and the corresponding hole in the clutch pedal were worn. I ended up enlarging the hole on the pedal and fitting an oil-less bronze bushing in its place, then using a shouldered bolt instead of the pivot pin. You can also weld the hole closed, re-drill the pedal and install a new pin.

And, AFAIK, I need to pull the dash to reach the pedal assembly, yeah? It may be possible from the bottom w/ mirrors and monkey arms... But I think I'd go nuts.

Yes, you need to pull the dash. Don't disconnect the master cylinder hydraulic lines though, they will flex enough to allow you to remove it from the brake booster.

Anything else I should replace/rebuild while I'm at it?

Check the wiper arms and relubricate them. Check all the firewall seals in front of the instrument panel. Re-seal the heater/air distribution box.
