I went through a similar experience. Since then (after losing the motor), I have installed a thermal alert ON THE MOTOR HEAD, as opposed to the factory temp sender that is mounted inside the thermostat housing (floating in air...No water = No temp indication...(= lost motor...:-( ) It seems to me that VW's design guarantees them lots of replacement motors... Sure they have another water level sensor in the main water reservoir, but it fails and then you know your water is gone when the motor loses power or starts to smoke, which is too late... With my enhancement, a simple hose failure doesn't turn a 10$ damage to thousands of $$$$$... I wish you better luck in the future.
