Years ago I did something like this.  I removed the upright
piece of the rear seat and reinstalled the bottom. Makes for a
ton of flat space.  You then can sleep easily, but no rear
seating.  What I would do today: fold the  seat down, and
build a platform that would end up level with the seat folded.
Make the center section removable to get to the engine. Add
a cabinet, and your done.  SOmeone should have done this
years ago, but we had westies.....
