Page 46.6 of the latest Bentley shows the rear brake assembly. The backing plate is held to the bearing housing by the 1 bolt that holds the brake cylinder in place and the 2 bolts that hold the lower support for the brake shoes. The lower support may be rusted to its locating pin and be difficult to remove even after the bolts are out. VW used to sell a rear brake repair set that included the new backing plate, brake shoes, springs, all mounting and adjusting hardware, parking brake cable, etc. This all came pre assembled on the new backing plate. I assume this means that the plate could be removed and installed with all of these parts still on it. BusDepot used to sell these though I think they only ever had the left side assembly.
