Hello Chris;

I had the propane tank on my '80 westy replaced last year when the turn off valve wouldn't (turn off that is). The tank was old enough that they wouldn't repair it, it needed replacing. The big issue for them was that needed keep it overnight to burn off all the residual propane. After that it was standard gas plumbing work - s0 - if you are going to do it yourself, make sure you burn off the contents first. I believe that they just used a bunsen burner type device.
