Walmart parking lots, unless otherwise posted, are usually free to stay in
overnight.  It's always best to go inside the store, even if you see a lot
of RV's in the parking lot, and ask.  Walmart policy is to welcome RV's in
their parking lots as long as they park at the far end (away from the
entrance) and don't bother other folks.  It's nice to return the favor and
do at least a little shopping.  In some towns/cities, it's against municipal
ordinance to stay in a parking lot overnight, so even Walmart has to turn
you away.

You can also stay at truck stops (Flying J for sure).  They can be kinda
noisy, but they're free.  And you have 24/7 eating and restroom facilities
plus showers (for a fee).

While it's a little ways off of I-40, the city of Pampa, TX, has a public
park downtown that provides free camping (max of three nights) complete with
water and electric hookups.  That right, water and electric FREE!  We stayed
there one night back in 1994 (traveling from Memphis to Oregon) and it was
very nice.  In Texas you can stay one night at state picnic areas and rest
areas for free.
