I don't think it makes much difference if it's light or dark. Of course, if it was neon pink or something like that it would probably be too bright and distract your vision. Black is fine, but over time it will fade from the sun and turn ugly. So I guess a light color is probably better. Glare on the windshield is not a problem, because dash cover material doesn't reflect too much light.
