The other way is to unscrew the faucet and gently pry it up and work on it that way. Re the hose. The hose just feeds in back of the panel. I'd suggest some straight connector (new hose to old hose) and then push the hose with 10% more pressure than someone pulls the hose out the other end. Just feed it along. If you have never taken your kitchen out, I have posted directions, search on my last name and sink etc. I'm signing off and leaving for a trip so I can't help you more than this for a few weeks.
