I think that is what I will do as my 4 yr old boy is outgrowing his regular car seat that we use in the van. In our car we use a britax starriser comfy. The problem I have seen with it is that when he falls asleep he can start tilting until his head is on the seat beside him. I think that the next booster will have higher sides.

as for coffee: one scoop per cup and sometimes an extra one for the pot. You can always dilute with hot water, but over extracted coffee has a bitter astringent quality. BTW Peet's has changed their coffee to be more like their biggest competitor since they went public. It is no longer as darkly roasted as it was for the first 20 or so years.
