Sorry to rain on your parade. Removing heat from the size of Vanagon cubic footage requires a lot of energy. All that glass for solar gain even the primary and aux battery combined can't last very long. Even if you are willing to add a serious battery bank like those in big sail boat is still not a viable solution. This is the nature of thermodynamics.

Now if you go to the extreme and insulate the cabin very well and devise some ultra-high efficient air to air heat exchanger so you can still breath inside that may be different.:-)

Here is an item that has potential for you campers. A Sanden Scroll compressor that is driven by an electric DC motor. This would make it possible to use your airconditioning system without the engine running. Power requirement details are sprarse except for 320 VDC. This seems odd but the compressor comes with some kind of power box. The scroll is one of the quietest and durable compressor available. Add a reversing valve and presto, you have a heat pump! I will try and get more details if anyone is interested.
