If I were to spend the $$$'s on a portable fridge, I would mount it in the same place that Westfalia located the Dometic RC-160E Portable Refrigerator (top-load) in my Camper; right behind the passenger seat.

Though its nice to have a fridge in the van, I use mine a lot of other places; building it into the existing cabinets would ruin its portablility and it would lose a lot of its functionality. I use mine in my coach as a drink refrigerator when I am on a long trip, freeing up my larger built-in fridge for food storage.
