We do a lot of cooking in the van and for that reason, plus the fact we run a heater when it's cold, I installed two four-inch 12v computer fans in the upper corners of the screen frame above the stove. They're wired to the fluorescent wiring just above them, each has a radio shack slide switch epoxied to it.

I can crack the window and turn on just the fan in that corner, or open it all the way and turn on both fans. they don't draw much current and do a pretty good job of evacuating the smell of sauteed onions, fish, what have you. You can see the steam being pulled out from the stove just below. The way it works out, with stove lid up, it puts the two fans right above the top edge of it.

The screen frame allowed me to used the original mounting screws from the computer at the three outside corners of the frame, the inside corner of the fan hangs free.
