Update:
We had the fuel filter replaced with a new Bosch filter - and so far,
our Westy seems to be running back at normal now.
We also added octane booster when we went to top off the gas ... so
unfortunately, it seems we may have added too many variables to really
figure out what went wrong.
Bad gas or clogged fuel filter?
We still haven't driven her long enough to figure out if the problem
truly went away. Hoping to find out for sure this coming Sunday
evening on our short trek to Yosemite...
Thanks to all for the suggestions and thanks to Tassi, Inc for
changing our fuel filter -- we are that bad that we can't change our
own fuel filter!
