Exactly the three things I would consider.
You can remove the thermostat & boil it/replace it.
While it's out check the water pump flow.

My conversion's cooling system worked good once I figured the air bubble
thing out on the top of the Subbie engine.
But.... It wasn't until I replaced the radiator that it Really Worked As New.
I would present this to every customer, & have them consider this as part &
parcel of a top notch conversion job.
Stock radiators (and probably most are stock) are going on 20 years now,
and should be replaced.
