this is one of the very rare applications where i think stainless might be over kill. i have yet to take apart a cv joint that had bolts that were seized from rust. usually the grease penetrates/leaks over time to keep the bolts well lubed. 9 times out of 10 cv joint bolts only fail to come out because the wrench operator failed to clean the socket head of the bolt out, thereby stripping the socket head of the bolt.
