The fridge fan runs completely independently of the fridge mode. In fact the fridge does not even have to be on for the fan to come on. As long as the temp behind the fridge is hot enough the fan should run. A dark colored Westy parked with that side of the van in the direct sun can easily cause the fan to run even on a cool day with the fridge off.

A simple way to test the fridge fan temp switch is to remove the small grill from the side of the fridge cabinet. Look in the hole and you can see the small round temp switch with 2 wires connected to it. Then light a propane torch on low and aim it at the switch for the count of 2 or 3, no more. The fan should come on.
