John, Folbots and other folding kayaks are GREAT! I picked up a used Folbot a few years ago and only sold it when I thought I was moving (and needed the $). Perfect for Vanagon use as they pack into one or two duffle-sized packages, as you said. New-er ones are have a hypalon coated skin around a aluminum frame. My used one was found for $200 and sold for $300. I have a hardshell boat now and would trade it for a Folbot or klepper in a heartbeat!
