Due to the very low voltage nature of the thermocouple output, the pilot LED amplifier input is very sensitive. It sounds like you are testing this stuff with the fridge out of the Vanagon. If so, are you running a clean ground connection between the fridge chassis and the ground side of the power supply that you are using to power the LED panel? Even if it is still in the Vanagon grounding of the fridge to the body can be an issue as far as the pilot LED goes.

It sounds like your thermocouple is working fine. The wiring is suspect.
