How about using an airbag jack like this one:(http://www.4x4winches.com/airbagjack.htm)? Put it between the upper bunk and roof when deflated, then pump it up with exhaust (some models can use a portable air compressor).

You could even build your own: (http://pinzi.us/html/air-jack.html) if you are so inclined.
