A bad thermostat - if stuck in the closed position, will cause the sensor to blow out of the tank. BTDT!

Try pulling the thermostat, put the coolant level sensor back in, and give it a hard run. If the sensor pops out again, you prol'ly have head gasket issues to deal with.
