When you have all the new parts and you're having the flywheel resurfaced it is customary to take the full assembly to a company that specializes in clutches and rebuilding. They set the entire system up to the proper fit to specifications they have in their "big book". These are specs you don't have. The local clutch shop has improved VW, Porsche and GM clutches beyond OEM feel and performance that included better shifting, smoother operation, easier clutch action.
