The GPS antenna and Satellite radio antenna that I have have very thin coax cables. I can't speak to what your 2 meter ham antenna's cable is like.....

So, I mounted the antennae under the luggage rack (magnetic mounts), ran the cables back towards the poptop. I've a 91, so the canvas is held in place with aluminum strips that in turn are screwed into the roof. So at a place on the left side, where the metal roof has a reinforcement bend, I carefully unscrewed a little bit of the aluminum (which coincentally has a break between two strips near there). I then ran the cables under the canvas, and screwed the strips back in.

Then I carefully detached the forward section of the can holder (that contraption above the windows). I then snaked the cables in behind it and reattached it to the ceiling. I then ran the cables down behind the curtain and behind the cabinet.

That's all I had to do in my case. However, I could have continued the cable run through the hole in the cabinet (where the cables run for the fridge to the aux battery), under the drivers seat, under the carpet in front of the drivers seat up to the dash.

If you have a long enough cable that is.
