I replaced all the vacuum lines on my 82 air cooled Westy. Bus Boys has a pretty nice website that shows a schematic of all the vacuum lines in the engine bay. You can click on each hose individually and it shows you the Bus Boys part# and price. I don't recall them selling a kit with all the lines, but if you give them a call they may be willing to negotiate. I am sure that many of the other on-line vendors may be able to help you on this.

One way to search for vacuum leaks is to shoot starter fluid on the hoses and hose junctions. If the starter fluid gets sucked in through a cracked hose the idle will jump up. I have heard of people doing this with propane as well. Don't forget to check the fuel injector O-rings.

The temp II sensor is pretty inexpensive and easy to replace. You may want to replace it just to eliminate that possibility. I actually rigged up a contraption at work with a hot stir plate, ring stand, thermometer, and volt gauge. I positioned the sensor in a beaker full of cold water and gradually heated it to boiling all the while recording the resistance and water temp. Turned out my sensor was junk.

Not to be exceedingly dense but how do I determine if there is a vacuum leak? I'm not really sure which lines are vacuum and which are not.

Does any of our list vendors sell some kind of kit to replace all these 27 year old plastics?
