Being somewhat sedentary while camping due to an assortment of health limitations, the wife and I usually go with a "2 meals + snacks" plan.

Our staple dinner is some sort of "bean slog": black or pinto beans with grilled onions and peppers, chili powder, etc. usually prepared at home and stored in tupperware. Throw it on a tortilla with some decent cheese and salsa. An assortment of freshly chopped salad vegetables either on the side or in the tortilla prevent the ravages of scurvy and such. Leave out the tortilla and serve in a bowl topped with sour cream and it's taco salad. Alternate dinners (for when bean slog gets tiresome) are usually veggie-dogs with home-made sauerkraut, split-pea or lentil soup, or the perennial favorite PB&J.

Breakfast is the inevitable eggs (scrambled or omelet, full of vegetables & cheese) with either toast, bagel, or oatmeal.

Everything I eat (excl PB&J) gets a heavy dose of whatever my favorite hot sauce is at the time.

Our "snack meals" (of which we usually have one or two a day) are tortilla chips and salsa (or potato chips & cottage cheese), nuts and trail mixes, crackers, pretzels-- well, you probably get the idea.

On those occasions when my ills are minor and I can do some real hiking, I carry an MRE or two and supplement it with a couple power bars. Since I'm really only vegetarian by marriage, I find myself looking forward to those MREs, as they usually contain MEAT! Not particularly tasty meat, but with my degraded sense of smell/taste (cause unknown; strep infections? Gulf War Syndrome? too much glue vapor building models as a kid? probably all those) I can eat practically anything so long as it's got hot sauce on it.
