We need to expand our horizons. We usually go out on weekends, so that's three to six meals. We have a limited list of "favorites" and we're looking to expand the list.

Breakfast has settled to being Simon's Camp Eggs (scrambled eggs, with some diced ham and a good coupla' spoonsful of mild salsa mixed in). We have cooked bacon and sausage (outside the van), but find it to be more mess than it's worth. Alternate is to have breakfast at a local diner.

Lunch is burgers or hot-dogs, with beans or potato salad.

Dinner is usually one of: Tuna cutlets and pasta/veggie stuff from Trader Joe's Steak with caesar salad and new potatoes Simon's Chicken Tortilla soup Some really nice creamy, almondy sauce with shrimps in it; caesar salad with this one, as well.

(caesar salad = a baggie of pre-cut and washed lettuce leaves, onto which I shake a goodly dollop of low-fat caesar dressing. We pile that into our camping bowls and add shredded parmesan and croutons.)

Wine with dinner, always. And assorted libations after dinner, for them as wants ...
