Well, me, I'm vegetarian so I'm certainly not cooking up bacon inside or
outside my van and further have little concern about clogging up my
cardiovascular system from what I do cook and eat.  There are however plenty
of smelly and splattery things I do cook and eat while camping that I
wouldn't want smelling up my van.... and remember that a bear can smell WAY
better than you... as far as the bear is concerned the smell of the pasta
sauce you reheated last week is still oozing out of the fabrics inside the
van.

BTW, the soot reference is due to what the headliner looks like on nearly
every full westy I've ever seen, at least those which had been getting
cooked inside of  regularly.
